toddler food: honey soy chicken


I went hunting through my mum's old recipe book yesterday and found this gem. Modified slightly as I don't think it needs the sugar or tomato sauce. These are very tasty, and perfect for toddlers to munch on. I would peel the meat off the bone for them and check there are no hard bits of cartilage they could choke on. 

Once I made these I used them three ways:

- Fresh out of the oven for Harry's dinner last night
- A chicken and bean pasta for his lunch today 
- Melted cheese and chicken sandwich fingers for a snack tomorrow 

Ingredients 

1/4 cup soy sauce 
2 tbs honey 
2 tbs lemon juice 
1/2 garlic clove, crushed 
3 organice chicken drumsticks (skin removed) 

Method 

1/ Preheat oven to 180°C


2/ Combine soy sauce, honey, lemon juice and garlic in a bowl and mix well
3/ Place the chicken drumsticks in an ovenproof dish in a single layer and pour the sauce over them 


4/ Cover with foil and cook for 45 minutes or until the chicken in cooked. Rotate the drumsticks every 10 minutes to get the most out of the marinade
