sweet chilli prawns with crispy wontons

This is such a goodie. Perfect for a fast entree at a dinner party or a light summer dinner. I had something similar at a restaurant once and became obsessed with trying to copy it. This is the result and I promise you will love it.

Ingredients 
(serves 4)

2 ripe avocado, mashed
500g peeled green prawns
3 cloves garlic, minced
Knob of butter
Handful of parsley, finely chopped
1 1/2 cup vegetable oil (or enough to shallow fry wantons)
1pkt wonton wrappers
Sweet chilli sauce

Tip: Same time, I get the de-costi pre packaged garlic prawns at Woolies
Tip: Wantons can be made in advance and kept in a sealed container 

Method 


1/ Cut about 8 square wanton wrappers in half (into triangles). Heat vegetable oil on med/high, drop the wontons in and deep fry, turning once, until golden an crispy (they should only take about 30 seconds, lower heat if they are burning). Remove from oil and place on paper towel to drain


2/ Mash avocado with a fork and dollop on each plate ready to serve 


3/ Heat frypan to medium and add butter. Sauté the garlic until fragrant. Add the prawns and toss in the garlic for a few minutes until cooked. Stir through the parsley 


4/ Arrange wantons in the avocado, top with prawns and drizzle sweet chilli over the top
