- Making delicious banana bread is dangerously easy. And, it saves you the $4.50 buying a single slice at the local cafe (which we all know is never enough). I am oh so excited about my afternoon now, fresh warm banana bread out of the oven, cup of coffee from my new Nespresso machine,
baby sleeping soundly... well, two out of three aint bad.
- Ingredients
- Butter, to grease
- 1 3/4 cups self-raising flour
- 1/4 cup plain flour
- 1 tsp ground cinnamon
- 2/3 cup, firmly packed, brown sugar
- 1/2 cup, skim milk
- 2 eggs, lightly whisked
- 50g butter, melted, cooled
- 2 overripe medium bananas, mashed
Method
1/ Preheat oven to 180. Grease an 11 x 21cm loaf pan. Line with baking paper
2/ Sift the combined flours and cinnamon into a large bowl. Stir in the sugar and make a well in the centre
3/ Place the milk, eggs, melted butter and banana in a medium bowl, and stir until well combined
4/ Add the banana mixture to the flour mixture and stir until just combined. Spoon the mixture into the prepared pan
5/ Bake in the oven for 45-50 minutes or until a skewer comes out clean
Leave to cool for 5 minutes
(Keep in an airtight container for up to 3 days. Alternatively, freeze for up to 1 month)
