creamy mushroom sauce

I'm pretty certain this sauce is the reason Henry asked me to marry him. A friend of mine who worked at a fancy restaurant mentioned the ingredients to me but not the quantities. So I made it continuously until it was just right, and it's truly liquid gold. We have it at least once a week and Henry usually cooks it, but we have never used a recipe, so the quantities are pretty vague.

Creamy Mushroom Sauce 

Ingredients

2tbs olive oil 
2 cups of sliced button mushrooms
2 garlic cloves, finely chopped
2tbs soy sauce 
1 splash of white wine / chicken stock if no wine 
3/4 cup cooking cream (add more if it's too salty)
Cracked black pepper to season

Method 

1/ Pour olive oil into a frypan and simmer the garlic on medium until fragrant

2/ Add mushrooms and cook for 2 minutes then add the wine (or stock) and cook for a further 3 minutes until the wine has reduced

3/ Pour in the soy sauce, cook for a further 2 minutes

4/ Pour in the cream and simmer for about 10 minutes on med-low until the sauce has thickened

Season with black pepper and pour over a juicy steak or chicken breast. Don't add any salt, there is plenty in the soy sauce
