baby & toddler food: vegetable spaghetti

I know a few babes who have gone through a pasta-only phase, much to their mummy's enjoyment. Sometimes it's easier to go with it than to fight it, and if it's pasta they want, it's pasta they'll get - but maaaaybe it's the new fancy red pasta, or the cheesy orange spirals, or the green spaghetti, see where I am going with this?

All you need is some fancy new names for your colourful 'pasta' and a pasta cutter which can be around $30 - you place the cut vegetable inside and it cuts a long spiral - OR if you just want the budget version grab a julienne peeler from your local supermarket for around $5.

Ingredients 

1 carrot, peeled in long julienne strips
1/4 cup cheese
75g creamed corn (or 1/2 a small tin)

Method

1/ Bring a small saucepan of water to the boil. Add the carrot and cook for a minute or until tender. Remove from heat. Drain.

2/ Add the creamed corn and cheese and gently stir through to melt. Serve.

Tip: Try making a colourful pasta using a range of different vegetables.
